- All fish served at Sibaya’s restaurants in Durban draws from the Sassi green list.

- Hot starters include delicious golden fish cakes, fresh Saldanha mussels and grilled baby squid;
- If you’d like a crisp cold starter, the fresh slivers of Norwegian salmon are served with a rocket, capers, apple and horse radish dressing;
- Follow up with a main course of Sassi-approved green-listed hake fillet, sole or pan-seared salmon; and
- We recommend the Cajun spiced tuna medallions set on a creamy wasabi mash, roasted cherry tomatoes and herbed lemon butter sauce.
Sibaya’s commitment to marine conservation is just the tip of the iceberg of Sun International’s support for greenness. With South Africa currently experiencing severe water shortages, Sibaya has implemented a series of water-saving initiatives across the board, including push taps in the kitchens and staff toilets and a borehole project, which is nearing completion. Hot water has also been isolated in certain areas, and water pressure has been reduced throughout the complex.
